Strawberry Syrup adds a sweet, fruity note to Strawberry Mojito.
Makes 2 cups
16 ounces strawberries, chopped
1 cup sugar
Combine strawberries, sugar, and 1 cup water in a saucepan over medium heat. Bring to a boil, reduce heat, and simmer 10 minutes, stirring frequently. Strain, discarding solids, and pour into a glass jar. (Skim foam from top, if necessary.) Cool completely. Cover and store in refrigerator up to 2 weeks.
