Strawberry Surprise Cake

If you love strawberries and love cake you should try this cake. A nice yellow cake with strawberry filling, and cream cheese frosting. ENJOY!

Ingredients

  • CAKE
  • 2 cup(s) all-purpose flour
  • 1 teaspoon(s) baking soda
  • 1/4 teaspoon(s) salt
  • 1 cup(s) butter or margarine softened
  • 2 cup(s) granulated sugar
  • 4 eggs seperated
  • 1 teaspoon(s) vanilla
  • 1 cup(s) buttermilk
  • FILLING
  • 1 cup(s) granulated sugar
  • 12 + large strawberries thinly sliced
  • FROSTING
  • 8 ounce(s) cream cheese cold
  • 1/2 cup(s) butter softened
  • 4 cup(s) powdered sugar
  • 1 teaspoon(s) vanilla
  • 3 tablespoon(s) milk
  • DRIZZLE FROSTING
  • 8 ounce(s) cream cheese softened
  • 1/2 cup(s) butter softened
  • 4 cup(s) powdered sugar
  • 1 teaspoon(s) vanilla
  • 1/2 cup(s) milk

Preparation

  1. CAKE
  2. 1. Line bottoms of 3 - 8 inch pans with paper; grease and flour sides.
  3. 2. Mix flour, baking soda and salt set aside. Beat butter and sugar in large bowl with electric mixer on medium speed until light and fluffy. Add egg yolks, 1 at a time, beating well after each addition. Stir in vanilla. Add flour mixture alternating with buttermilk, beating until well blended after each addition.
  4. 3. Beat egg whites in another large bowl with electric mixer on high speed until peaks form. gently stir into batter. Pour evenly into prepared pans.
  5. 4. Bake at 350*F for 30 minutes or until toothpick inserted into centers come out clean. Immediately run spatula between cakes and sides of pans. Cool 15 minutes; remove cakes from pans. Remove paper. Cool completely on wire racks.

  6. STRAWBERRY FILLING
  7. 1. While the cake is baking, slice strawberries in a large bowl add sugar and put in refridgerater. Keep refridgerated for at least an hour.

  8. FROSTING
  9. 1. Mix cream cheese, butter, confectioners sugar, vanilla and milk together.
  10. 2. Let sit for 15-30 minutes.
  11. 3. After cake has cooled, frost bottom layer and add strawberries evenly.
  12. 4. Place and repeat step 3 for second layer.
  13. 5. Place top layer and frost top and sides covering any trace of strawberries in the layers. Decorate top with strawberries if desired.

  14. DRIZZLE FROSTING
  15. 1. Mix cream cheese, butter, confectioners sugar, vanilla and milk together.
  16. 2. Let sit for 10-15 minutes.
  17. 3. After cake has cooled, frost bottom layer and add strawberries evenly.
  18. 4. Place and repeat step 3 for second layer.
  19. 5. Place top layer and drizzle frosting making sure to have the frosting drizzle down sides. Decorate top with strawberries if desired.
