I couldn't find raspberry vinegar so I used red wine vinegar with pomegranate instead. The salad came out really great. The fruit made it sweet, but not overly sweet and balanced out the onions. The pecans added some crunch. The dressing was wonderful as well, next time I hope to find the raspberry vinegar. I served it as an appetizer before a meal. I also think it would be great with some shrimp, chicken, or salmon.
