Strawberry Muffins

Yield 3 dozen


  • 2 cups all-purpose flour
  • 1/3 cup sugar
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 (10-ounce) package frozen sliced strawberries, thawed and undrained
  • 2 eggs, beaten
  • 1/3 cup vegetable oil

How to Make It

  1. Combine flour, sugar, cinnamon, soda, and salt in a large mixing bowl; make a well in center of mixture.

  2. Chop strawberries; combine strawberries, eggs, and oil. Add to flour mixture, stirring until dry ingredients are moistened.

  3. Spoon batter into greased miniature muffin pans, filling two-thirds full. Bake at 350° for 25 minutes or until golden brown.
