- 2 cups all-purpose flour
- 1/3 cup sugar
- 2 teaspoons ground cinnamon
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 (10-ounce) package frozen sliced strawberries, thawed and undrained
- 2 eggs, beaten
- 1/3 cup vegetable oil
How to Make It
Combine flour, sugar, cinnamon, soda, and salt in a large mixing bowl; make a well in center of mixture.
Chop strawberries; combine strawberries, eggs, and oil. Add to flour mixture, stirring until dry ingredients are moistened.
Spoon batter into greased miniature muffin pans, filling two-thirds full. Bake at 350° for 25 minutes or until golden brown.
