Strawberry, Mint, and Goat Cheese Salad

Serve over mixed greens or fresh baby spinach for a colorful side salad or starter. You can chill goat cheese in the freezer for five minutes to make crumbling it easier.

  • Yield: 6 servings (serving size: about 1/2 cup)


  • 3 cups quartered strawberries (about 1 pound)
  • 1 tablespoon chopped fresh mint
  • 1 tablespoon balsamic vinegar
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup (2 ounces) crumbled goat cheese


Combine quartered strawberries, chopped mint, balsamic vinegar, and black pepper; toss gently to combine. Cover and chill 1 hour. Sprinkle evenly with crumbled goat cheese. Serve immediately.
