Strawberry-Lemonade Muffins

    Yummy! These are so light tasting. Great way to use up the strawberries that are not as pretty or fresh. Will make again. I put the remaining 1/4 cup of sugar in the measuring cup and put a pinch of sugar on top of each before cooking not using much at all! Mine made 18, not 15.

    I must have done something wrong. Mine turned out like a damp brick. Followed the recipe too. Did anyone else have a problem?

    These are absolutely yummy !!!! I made them twice in 3 days. I ended up with 16 muffins both times - not a bad thing considering how quickly they were eaten up by family and friends. This is going into the permanent collection - can't wait for the strawberries to be ready for picking in May (here in Virginia) so I can make the muffins with really ripe berries.

    Very good muffins! Husband had two right out of oven and said keep this recipe. Did not have self rising flour so used conversion.

    yummy and moist. The strawberries add the moisture. Great way to use the strawberries we picked ourselves.

    Light, fluffy and delicious! Very easy to make. Next time I'll be sure to chop the strawberries into even smaller pieces so we get a bit of strawberry in every bite. I also noticed that the batter that sat out longer (I made them in two batches) produced perfect looking muffins, so you may want to let yours sit on the counter for 15 minutes or so after mixing.

    Despite the richness of the ingredients, these muffins have a light and tender texture. I used strawberries that, though beautiful, didn't have a strong flavor. The muffins would probably have been scrumptious if they had more of the strawberry flavor. The sugar that was sprinkled on top tended to fall off. I'll try this recipe again with better quality strawberries.

    Delicious. I followed the recipe exactly, and the results were fantastic. I used farm fresh strawberries, so of course, the strawberry flavor was sweet and delicious. Initially upon reading the recipe, I was worried that the lemon flavor would be overpowering, given the amount of lemon juice and zest, but as it turned out, the lemon was very subtle. It balanced very nicely with the sweetness of the strawberries and the additional sugar on top. The overall flavor reminded me a lot of a strawberry flavored Pop-Tart. I made a second batch to give to some neighbors. I loved the other reviewers suggestion of using fresh blackberries in the fall.
