Wonderful Jam recipe! I don't think I'll need to buy strawberry jam again, when this is so flavorful and easy to make. My family loved it! Especially delicious on raspberry muffins.
Strawberry Cordial Jam
Add liqueur to this jam for flavor that's reminiscent of an old-fashioned cordial. If you prefer, substitute 2 tablespoons black currant syrup plus 1 tablespoon fresh lemon juice for the liqueur. Keep this refrigerated for up to one month.
Yield: 16 servings (serving size: 2 tablespoons)

Ingredients
- 6 cups chopped strawberries (about 1 1/2 pounds)
- 1 cup sugar
- 3 tablespoons crème de cassis (black currantâflavored liqueur)
- 1 tablespoon water
- 1/8 teaspoon ground cinnamon
- 1/8 teaspoon ground cardamom
Preparation
- 1. Combine all ingredients in a medium saucepan over medium-high heat; bring to a boil. Reduce heat, and simmer until reduced to 2 cups (about 1 hour and 10 minutes), stirring occasionally. Cool completely; cover and chill 8 hours.
