- 3 1/2 pounds fresh green beans
- 3 large onions, chopped
- 1/2 cup plus 1 tablespoon olive oil
- 2 1/4 cups water
- 2 1/2 tablespoons chopped fresh parsley
- 2 1/4 teaspoons salt
- 1 teaspoon pepper
How to Make It
Remove strings from beans. Wash and cut beans into 1 1/2- inch pieces; drain.
Sauté onion in oil in a large Dutch oven 5 minutes. Add beans; sauté 8 minutes.
Add remaining ingredients; bring mixture to a boil. Reduce heat; cover and simmer 30 minutes or until beans are tender.
