Ingredients

1 pound small red potatoes, quartered
2 tablespoons water
Butter-flavored spray (such as I Can't Believe It's Not Butter)
1/4 teaspoon salt
1/4 teaspoon pepper

Preparation

Arrange potato quarters in a 1-quart microwave-safe dish. Add water, and cover with heavy-duty plastic wrap. Microwave at HIGH 8 to 10 minutes or until tender. Drain.

Coat potato with butter-flavored spray; sprinkle with salt and pepper.
