  • 7 to 8 8oz tenderloin filets
  • 2 T olive Oil


  1. Preheat oven to 425F with a rack in the center

  2. Sear filets in oil on one side for 4 to 5 minutes. Turn them over, place pan in oven, and roast to desired done-ness per below chart. Allow filets to rest 5 minutes.

  3. Serve with Bernaise sauce.

  4. RARE:
  5. Sear: 5 minutes
  6. Roast: 5 minutes
  7. Rest: 5 minutes

  9. Sear: 5 minutes
  10. Roast: 7 minutes
  11. Rest: 5 minutes

  12. MEDIUM:
  13. Sear: 5 minutes
  14. Roast: 9 minutes
  15. Rest: 5 minutes
