  • Salad

Preparation

  1. For Salad, toss:
  2. 1 lb. cremini mushrooms, sliced
  3. 1 bag baby spinach or arugula (6 oz)
  4. 3/4 c. thinly sliced shallots or white onion
  5. 3/4 c. fresh parsley
  6. 1/2-3/4 c. fresh mint leaves

  7. For the steak:
  8. 2 strips bacon, diced
  9. 1 NY strip steak, seasoned with salt and pepper

  10. cook bacon in pan over med-high heat until crisp. Sear steak in same pan as bacon drippings until desired doneness. Thinly slice and serve over lettuce mixture with lemon pepper vinaigrette

  11. Lemon Pepper Vinaigrette
  12. 1/3 c. olive oil
  13. 1/4 c. fresh lemon juice
  14. 2 t. cracked black pepper
  15. 1 t. dijon mustard
  16. salt to taste
