- 1/2 cup butter or margarine, softened
- 3/4 cup firmly packed brown sugar
- 1/4 cup molasses
- 1 egg, beaten
- 1 cup cooked, mashed squash
- 1 3/4 cup all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup chopped pecans
How to Make It
Combine butter, sugar, and molasses, beating well. Add egg; beat well. Stir in squash. Combine flour, soda, and salt; add to squash mixture, mixing well. Stir in pecans.
Spoon batter into greased muffin pans, filling two-thirds full. Bake at 375° for 20 minutes.
