Ingredients
- 1-1/2 cup(s) bread crumbs
- 4 chicken breasts
- 1 egg
- 2 tablespoon(s) french dijon mustard
- 1/2 pound(s) shredded cheddar cheese
- 1/2 pound(s) sliced deli ham cut into strips
- 4 tablespoon(s) olive oil
Preparation
- Slice chicken breasts horizontally, but not quite all the way through
- Mix dijon mustard, ham, and cheese in a bowl
- Beat egg in a separate bowl
- Place bread crumbs in a separate bowl
- Heat olive oil in a skillet on high heat
- Preheat oven to 400
- Stuff ham/cheese/mustard mixture into each chicken breast
- Holding the chicken breast "pocket" together, dip into beaten egg, then bread crumbs
- Fry one side to a golden brown and place in a greased baking dish
- Do the same for the remaining chicken breasts
- Bake at 400 for about 20 minutes
