Spring Peas with Pancetta

Very yummy. I was short on peas, so I made with with half corn, and it still worked. Next time I might add a bit of smoked paprika to give it a little smoky kick.

REALLY good! My new favorite side. Served with spicy honey chicken thighs and roasted garlic potatoes. Will make again and again.

I use frozen peas and this turns out great every time. I have substituted ham or canadian bacon because I had it on hand and it's just as good.

Tasty, easy side dish. Nice for a holiday meal.
