Spring Letture with Avocado Dressing and Pistachios

Mixed spring lettuce - such as red leaf, watercress, and baby bok choy.

Ingredients

  • 1/4 avocado
  • 1/2 cup(s) buttermilk
  • 2 teaspoon(s) sherry vinegar or red wine vinegar
  • 6 cup(s) mixed spring lettuces
  • 1/3 cup(s) roasted pistachios shelled

Preparation

In a food processor, process the avocado, buttermilk, vinegar, 1/2 tsp salt, and 1/4 tsp pepper until smooth. Drizzle the lettuces with the dressing and sprinkle with pistachios.
