Spinach with Garlic Vinaigrette

    Dressing is absolutely fabulous...but just over spinach and onions leaves a whole lot to be desired. Add black olives, tomatoes, red onions, capers, hard boiled egg, celery, radishes, cucumbers, etc. and it goes from blah to WOW! The dressing is the kicker!!!

    Loved it! Made this along with meatloaf and traditional baked potatoes, but this was my favorite part of the meal! Will definitely make again.

    Yummy! I doubled it, and used tarragon vinegar since I didn't have white wine vinegar. Very good!

    This dish was altogether terrible. The dressing needs a sweetness, perhaps from a little sugar or honey.

    LOVE this salad! Incredibly simple to prepare, intensely flavorful, and the entire family loved it. This will surely become a go-to side on busy weeknights.

    Dressing is good to very good, followed other's suggestions and added more veggies and a boiled egg. Easy to make.

    I have only made the Wilted Spinach variation. Go to the bottom of the recipe for this variation. I typically use a pinot grigio vinegar (and probably use more garlic.). One of the few Cooking Light recipes that I have made repeatedly because usually I find them to be under spiced.

    Very quick and easy. Had it with steak and thought it was perfect! I would never eat this as is for a meal, but it's a great quick side salad!
