1 (15.5-ounce) can Great Northern beans, rinsed and drained
1/2 cup thinly sliced green onions
1/2 cup finely chopped red bell pepper
5 bacon slices, cooked and crumbled
2 (7-ounce) packages fresh baby spinach
How to Make It
Combine first 6 ingredients in a small microwave-safe bowl, stirring with a whisk; microwave at HIGH 1 minute or until hot. Place beans in a 2-cup glass measure; microwave at HIGH 1 minute or until hot.
Combine onions, bell pepper, bacon, and spinach in a large bowl. Add syrup mixture and beans; toss well to combine. Serve immediately.
Terrific! Whenever I take it to a party or potluck, this bowl is always the first one empty! I follow directions exactly, but substitute stoneground mustard for dijon. Perfect every time and always get asked for the recipe wherever I take it.
I was looking for a spinach salad recipe that wasn't the standard. The beans and red peppers added great flavor and texture. I didn't have real maple syrup and had to use the fake stuff. Therefore, the dressing wasn't quite as good as it might have been. This is definitely worth having again once I get the good stuff.
