Ingredients

  • 1 (6-ounce) package fresh baby spinach, coarsely chopped
  • 1 (10-ounce) package angel hair coleslaw
  • 1 large carrot, shredded (about 1 cup)
  • 1/3 cup thinly, vertically sliced red onion (about 1/2 small)
  • 1/3 cup light mayonnaise
  • 1/2 cup low-fat sour cream
  • 2 tablespoons red wine vinegar
  • 1 tablespoon sugar
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper

Preparation

  1. 1. Combine first 4 ingredients in a large bowl. In a small bowl, combine mayonnaise and next 5 ingredients. Add to spinach mixture; toss gently to coat. Cover and chill at least 1 hour.
