Spinach Salad with Gorgonzola, Pistachios, and Pepper Jelly Vinaigrette

    Made for my husband's birthday - huge hit! Added thinly sliced red onion. Served with pan seared salmon and twice baked potatoes....and a bottle of Schweiger Vineyards Extended Family Cuvee. Delicious! Great flavor combination.

    I love red pepper jelly, so I had to try this dressing. It was delicious, but I changed some of the salad ingredients to suit my family's tastes. Our salad was spinach, feta, sliced pear, and chopped cashews. I will definitely make it again and it is impressive enough for special occasions.

    My family loved this salad. It is great for a special occasion or family meal. I used almonds instead of pistachios and feta instead of gorgonzola just because that's what I had on hand. The dressing would be good on any kind of green salad. I will make this one again!

    I am not a big salad eater, but I loved this recipie. The store did not have red pepper jelly so I used jalepeno instead and pine nuts instead of pistachios. If you like the taste of blue cheese you will love this salad. Will definitely make it again.

    this is a perfect salad. period. i used candied pecans instead of pistachios, still delicious. pepper jelly is a miracle ingredient - so interesting and tasty. i'm planning on eating this for lunch, a LOT.

    I just served this on Thanksgiving-it was a tribute to my grandmother, who used to bring this goofy red pepper jelly/cream cheese appetizer to every gathering in the 70's. Kind of a family joke, so I made this. It was so incredibly easy, and so incredibly good. I would use the vinaigrette on any salad.

    Very tasty, but I felt it needed a little something more. Maybe red onions, cherry tomatoes....something. I will make it again, perhaps with modifications. I served it with Tourtiere, and it was a lovely accompaniment.

    Absolutely delicious. This dressing is as easy to make as anything I've ever made before. And it tastes wonderful! I substituted pine nuts for the pistacios in the salad, but the result was still first-rate. I've already had to share this recipe with a friend who tried it recently.

    I used fresh arugula from the garden instead of spinach and cashews in place of pistachios. Yummy!

    This salad is outstanding and very easy! I use an arugula/spinach mix instead of just spinach but everything else is the same. My entire family loves it!!
