  • 2 tablespoons red wine vinegar
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon Dijon mustard
  • 1/4 cup olive oil
  • 1 pound baby spinach leaves (about 10 cups)
  • 1/2 cup loosely packed crumbled blue cheese (about 4 oz.)
  • 1/2 cup shelled, toasted pistachios, coarsely chopped


  1. Combine vinegar, salt, pepper and mustard in a large bowl. Gradually whisk in oil. Toss spinach in dressing until coated. Divide among 8 plates, top with cheese and nuts, and serve.
