Spinach Salad
This easy spinach salad tossed in homemade vinaigrette makes a impressive side dish for any meal.

Ingredients
- 1 tablespoon balsamic vinegar
- 3 tablespoons olive oil
- 1 teaspoon light brown sugar
- 2 tablespoons lemon juice
- 1/4 teaspoon kosher salt
- 5 cups spinach
- 1/3 cup pecans
- 2 ounces goat cheese (1/2 cup)
Preparation
- In a large bowl, whisk together vinegar, olive oil brown sugar, lemon juice, and kosher salt. Add spinach to the bowl and toss well. Divide among 4 plates. Chop pecans and crumble goat cheese. Top each serving with some of the nuts and cheese.
