Spinach Rice

Yield 4 servings


  • 3 1/3 cups water
  • 1 1/2 cups uncooked long-grain rice
  • 1 1/2 cups chopped spinach leaves
  • 1/4 teaspoon ground red pepper
  • 1/4 to 1/2 teaspoon grated fresh ginger
  • 1/2 teaspoon salt

How to Make It

  1. Bring water to a boil in a medium saucepan; add rice. Cover, reduce heat, and simmer 20 minutes or until liquid is absorbed. Stir in spinach and remaining ingredients.
