I made this for dinner tonight and was really disapointed. It was super bland- no flavor at all and was just kind of gross. I make a lot of Health's recipes and they usually turn out good but this was a miss.

I really enjoyed the flavor and texture of the pesto ricotta and roasted peppers, however the wonton wrappers gave the dish an "off" flavor and a gummy consistency. It came together quickly and simply enough, so I'll give it another shot someday with the substitution of no-bake or traditional lasagna noodles rather than wonton wrappers. Also - needs more cheese.

I agree that as it's written, the recipe isn't as tasty as it could be, but I gave it 4 stars because with some basic modifications, it can be GREAT! So first, I like using a 9x13 pan, so I doubled most of the ingredients. I used two layers of wontons, 8 in each layer for this sized pan. I also used a little more than double the amount of spinach. To improve flavor, add 1/4 t. of garlic powder, 1/2 t. red pepper flakes, 1/8 t. freshly ground black pepper, and 2 t. dried oregano to the ricotta cheese mixture. Also, interestingly, this dish tastes even better left over, since the flavors have time to marinate together in the refrigerator. Give it a shot! My boyfriend and I absolutely love it!!

I LOVED this recipe! The pesto taste and the roasted red peppers was SOOOO good!!! I had a hard time not eating more than a "serving" though. And it's VERY easy to make, 1, 2, 3!! I'm not sure why others thought it was bland tasting. The pesto MADE it!
