Spinach, Pesto, and Feta-Stuffed Pork Tenderloin with Chunky Tomato Sauce

    Outstanding dish. Husband says this is a keeper. It was very easy. I'm always looking for quick week night recipes. I added a few fresh basil leaves along with the spinach. Also I couldn't find the tomatoes with balsamic vinegar so I used fire roasted tomatoes and added a tablespoon or so of balsamic. Served with orzo and Tricolor Salad.

    My boyfriend and I loved it, it is delicious! I made it exactly as it explained (although the meat took a little longer than 22 min., but maybe mine was thicker?). The only reason why I didn't give it more stars is because it didn't come out as pretty as in the picture. This is super easy and doesn't have expensive ingredients... a definite any-day-of-the-week recipe.

    Very Tasty recipe..I seared mine before puting in the oven so I lowered the cooking time to 17 min or so as the pork has some carry over cooking time while it rests..I personally dont like my pork tenderloin cooked well done..so all in all very good and would try a version with chicken too!

    SO delicious...couldn't find canned tomatoes with balsamic so used petite diced and added balsamic and fresh basil leaves. Also added some fresh basil leaves to the inside of the pork. So flavorful and tender!!! Will definitely make this again and try different variations.

    Loved this! I followed the recipe as written with a couple of modifications due to what I had on hand- I didn't have sundried tomato pesto, I used regular and added chopped sun dried tomatoes to the filling. I didn't have balsamic tomatoes so I just added balsamic vinegar to the tomatoes. This was great.

    Delicious and easy! I couldn't find canned tomatoes with balsamic vinegar either, so I added it to the garlic and basil can tomatoes (about 1/2 tablespoon). After it came out of the oven, the tomatoe mixture cooked down a bit and I felt needed more sauce; I added about a cup of pasta sauce. Served with suggested orzo and slightly wilted sauteed spinach.

    I made it for a couple of friends, everyone loved it. Had to make some modifications as unable to find all the ingredients. Used regular pesto and used more spinach than the recipe calls for as I thought it will keep the meet moist. The meat came out really soft. Could not find the balsamic vinegar diced tomatoes, used a can of basil, garlic & oregano, mixed with truffle oil, added more dry basil and red pepper flakes to spice up the dish. Served with sweet potatoes and shelled edamame for visual appeal. Will definitely make this again.

    I added the vineger, garlic and fresh basil to the tomatoes. I added some garlic and basil leaves to the mixture inside and it was amazing. Super easy to make and everyone loved it.

    Didn't love this one as much as others. The stuffing was good but we found the pork to be bland. I prefer other pork tenderloin recipes.
