I thought this was a good starting recipe, but I think on its own it is a little bland. I added feta cheese as one of the other reviewers recommended. Next time I might add artichokes and/or some balsamic vinegar.
I am all about recipes that are convenient, simple & impressive. This one is a hit! I have made this many times over with many compliments and have added artichokes, feta and chicken too. Refreshing during summertime!
I made this recipe as-is, and found it a little bland. I added a splash of balsamic vinegar and maybe 1/8th of a cup of grated Parmigianno-Regianno cheese, and liked it that way much better. I prefer things with a little more bite. This is a good starter dish, and lends itself to different interpretations very well.
