Spinach-Mushroom Sauté
As one online reviewer claims, "This was a nice change to the standard side dish." Serve this spinach-mushroom saute with a grilled steak for the perfect meal.
How to Make It
Melt 1 Tbsp. butter with 1 Tbsp. oil in a large skillet over medium-high heat; add sliced mushrooms and next 3 ingredients. Saute 3 to 5 minutes or until tender; gradually add spinach, stirring to coat with mushroom mixture. Remove from heat, and toss spinach mixture with 2 Tbsp. lemon juice.

This was a nice change to the standard side dish. Had a little extra so I folded it into the breakfast omelet the next morning. Have also used leftovers for quesadilla filling.

This was a great side dish! We didn't add the onion (we didn't have one) or the lemon juice (didn't want to accidentally ruin something that was already great) and everyone loved it (including the 2yo and the baby). Served it with grilled steak. We'll definitely make this again!

YUM! My ingredient proportions were probably totally wrong for this recipe -- I just used whatever mushrooms/spinach/onion I had left, plus jarred garlic and bottled lemon juice -- but it still turned out really good! I LOVE mushrooms and really like spinach, so my opinion might be a little biased! :)
