This tasty accompaniment combines both a vegetable and a starch for a great "one-dish" side.

Heat oil in a large saucepan over medium-high heat. Add onion; sauté 4 minutes or until tender. Add spinach and next 3 ingredients; sauté 1 minute. Add broth and butter; bring to a boil, and stir in couscous. Remove from heat; cover and let stand 5 minutes. Fluff with a fork. Serve immediately.
