Spinach and Feta-Stuffed Focaccia

    This was pretty good, but all of the flavors are so strong you only want a little bit. I served it as a side dish for roasted chicken, but in the future I would use it as an appetizer with small portions instead.

    Very good. The filling was different and really tasty - a nice mix of sweet and savory. I served it with a green salad dressed with a vinaigrette. This made a great weeknight dinner, but I could also see serving it as an appetizer for guests. I make it as written except used reduced fat french feta, my own pizza dough and left out the red pepper. I also put half the parmesan inside since the microplane grater I use makes the cheese so fluffy half of it was was plenty for the outside.

    After watching the video, I decided to try this recipe on a week night. We were happy with the result. DO plan to serve a salad alongside this. 1/6th is a small portion. I took the leftovers for lunch the next day.

    Love this recipe...the saltiness of the feta, sweetness of the raisins, spice of the red pepper and crunch of the pinenuts all go together so well.

    We love this recipe. We use dough from the bread machine instead of buying dough. We make it frequently. Often we will substitute pecans for the pine nuts and craisins for the raisins. However, we love it as presented as well.

    Really like this recipe - good for when I want pizza but am craving something sweet as well. I make a whole wheat dough which adds to the sweetness and makes it nice and chewy!

    I really liked the idea of this recipe, but wanted to build off ingredients I had at home, so filled it instead with pizza sauce, pepperoni, spinach, mushrooms, fresh mozzarella, and cheddar cheese. I also topped it with not only some grated parmesan, but also a healthy sprinkling of garlic powder. It turned out great, and my husband loved it. (http://happytrailstastymeals.blogspot.com)

    This was delicious and very easy to put together. Love the combination of pine nuts and golden raisins. Thought two bags of spnach would be too much but it wasn't. Didn't change anything in the recipe. A definite repeat.

    First recipe I'm reviewing on this site because it WAS that good. LOVE IT! Although, I didn't do raisins, and substituted sunflower seeds for pine nuts (too expensive for me!).

    WOW, this was unbelievably GOOD!! We ended up doubling the recipe for our family of 5 and doubling the fetta cheese as we didn't want the fetta to go to waste ;) It was just perfect combination of flavors, a bit sweet but WONDERFUL! Never have I thought spinach would taste so good!!
