I have made this twice now. Better using Greek plain non-fat yogurt. Came out with a thicker consistency then regular yogurt. I also add a some lemon juice to freshen up the flavors. Be sure to chill before service. Is a nice light dip.
Spinach Dip with Crudités
The always-popular spinach dip just got easier. Just combine frozen chopped spinach with yogurt, sour cream and onion, and serve with assorted fresh veggies or chips.

- 1 10-oz. package frozen spinach, thawed and squeezed dry
- 3/4 cup plain yogurt
- 3/4 cup reduced-fat mayonnaise
- 2 scallions, white part only, thinly sliced
- Salt and pepper
- Assorted crudités
- Blend spinach, yogurt, mayonnaise and scallions in a food processor until smooth. Season with salt and pepper. Keep covered and chilled until ready to serve. Arrange crudités around dip; serve cold.
