Spinach Au Gratin

Yield 4 servings


  • 3 pounds fresh spinach, cleaned and cooked
  • 1/4 cup plus 2 tablespoons grated Parmesan cheese
  • 1/4 cup plus 2 tablespoons finely chopped onion
  • 1/4 cup plus 2 tablespoons whipping cream
  • 1/4 cup butter or margarine, melted
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/2 cup buttered breadcrumbs

How to Make It

  1. Combine spinach, cheese, onion, whipping cream, butter, salt, and pepper; stir well. Spoon into a 1-quart casserole. Top with breadcrumbs. Bake at 450° for 10 minutes or until browned.
