Spinach-Apple Salad with Maple-Bacon Vinaigrette

    I love this salad. I am a big fan of salad bar in the fridge so I usually chop up all the ingredients and store them separately on a try in the fridge. When the time is right I pull the tray out and take a little out of each container and make my salad. That being said it was a great building block for my salad bar. I added some grape tomatoes and mushrooms which was wonderful. I also use Spring Mix as my base rather than spinach alone. The dressing is wonderful. I did not combine the bacon with the dressing because I thought it would become soggy. Overall this recipe is wonderful and I will make it time and time again!

    I gave this five stars because I consistently dislke my homemade salads, and I love this. We used fabulous Benton's bacon, grease in dressing and crumbles on salad for my hubby. The dressing keeps well and with spinach adds an easy weeknight vegetable to dinner.

    LOVE this salad. I top it with grilled chicken and gorgonzola crumbles for a filling dinner entree.

    One of my all-time favorite salads. My kids ASK for it - gotta love a salad that the kids want to eat.

    really good. I made it as written, but the dressing is so SPARSE!!!!!!! I know that's how the calories and fat are lowered, but let's get real. Gotta have the dressing or the spinach is just raw, blah!!!!!! I'll make it again and quadruple the dressing. Don't want to rip off my dinner guests, doncha know.
