1 (15-ounce) can no-salt-added black beans, drained
1 (10-ounce) can diced tomatoes and green chiles, undrained
1 (8 3/4-ounce) can no-salt-added whole-kernel corn, drained
2 tablespoons chopped fresh cilantro or parsley
1 teaspoon ground cumin
1/2 teaspoon hot sauce
1 pound turkey breast tenderloin, cut into 1-inch pieces
3/4 cup chopped onion
1/2 teaspoon bottled minced garlic or 1 garlic clove, minced
How to Make It
Combine first 6 ingredients in a bowl; set aside.
Coat a large nonstick skillet with cooking spray; place over medium-high heat until hot. Add turkey, onion, and garlic; cook, stirring constantly, until turkey is browned. Stir in bean mixture; bring to a boil. Reduce heat, and simmer, uncovered, 5 to 7 minutes or until turkey is done and most of liquid is evaporated, stirring occasionally.
