Tasted fantastic! Will definitely make this again! I substituted low fat plain yogurt for half of the sour cream. I was worried that it was going to be soupy, but it really thickens as it sits those last 5 minutes or so.

I only like baked mac and cheese and I didn't realize this was not baked so I added another 2 cups of cheese this time pizza cheese, 3 beaten eggs, a cup of milk and added Italian bread crumbs on top and baked it at 350 for 35 mins and it was awesome! It all got eaten with no leftovers. I served it with steak and a fruit salad

This is one of the best pasta dishes I've ever tasted. I used regular Velveeta and a 14 1/2 ounce can of Rotel. Delicious and easy.

My kids loved this! I made this recipe with whole wheat pasta instead of white. The only thing I may do different nex time is add a little milk to the recipe, and perhaps make with regular cheese instead of the mexican cheese. But only because my husband has a much more sensative palate than my children and I, and it was much to spicy for him. I would add the milk becuase the cheeses sauce was a little thick. Just add a salad and this is one of those great weeknight meals when you don't have a lot of time to cook. Also a good plus is that the cost of this meal is pertty low!

Absolutely loved this spicy mac & cheese recipe! It is now my daughter's favorite! I use Rotel original instead of the tomato and green chilies!

I liked it. but feels like it was missing a little something. i love spicy things - so i mixed in hot sauce to give it an extra kick and made it much better i thought.
