  • 1 baguette, cut into 24 diagonal slices
  • 2 tablespoons olive oil
  • 1/3 cup reduced-fat mayonnaise
  • 4 scallions, thinly sliced
  • 1/4 cup chopped gherkins
  • 1 tablespoon chopped capers
  • 1 tablespoon tomato paste
  • 1 tablespoon lemon juice
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 8 ounces cooked shrimp, roughly chopped
  • 1 tablespoon chopped chives


  1. 1. Preheat oven to 375ºF. Brush baguette slices on both sides with olive oil and place on a rimmed baking sheet. Bake for 10 minutes, turning over halfway through. Let cool.
  2. 2. In a large bowl, combine mayonnaise, scallions, gherkins, capers, tomato paste, lemon juice, paprika, cayenne and shrimp; stir well. Mound mixture onto baguette slices; sprinkle with chives.
