This was delicious! I served it at a cocktail party along with another 2 kinds of bruschetta, and people chose this one over the other 2. I recommend using the good kind of shrimp or jumbo and chopping. I also tried this with cocktail shrimp but it has a "fish" smell. The bigger shrimp tasted better.

Ingredients
- 1 baguette, cut into 24 diagonal slices
- 2 tablespoons olive oil
- 1/3 cup reduced-fat mayonnaise
- 4 scallions, thinly sliced
- 1/4 cup chopped gherkins
- 1 tablespoon chopped capers
- 1 tablespoon tomato paste
- 1 tablespoon lemon juice
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- 8 ounces cooked shrimp, roughly chopped
- 1 tablespoon chopped chives
Preparation
- 1. Preheat oven to 375ºF. Brush baguette slices on both sides with olive oil and place on a rimmed baking sheet. Bake for 10 minutes, turning over halfway through. Let cool.
- 2. In a large bowl, combine mayonnaise, scallions, gherkins, capers, tomato paste, lemon juice, paprika, cayenne and shrimp; stir well. Mound mixture onto baguette slices; sprinkle with chives.
