Ingredients

1 baguette, cut into 24 diagonal slices
2 tablespoons olive oil
1/3 cup reduced-fat mayonnaise
4 scallions, thinly sliced
1/4 cup chopped gherkins
1 tablespoon chopped capers
1 tablespoon tomato paste
1 tablespoon lemon juice
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper
8 ounces cooked shrimp, roughly chopped
1 tablespoon chopped chives

Preparation

1. Preheat oven to 375ºF. Brush baguette slices on both sides with olive oil and place on a rimmed baking sheet. Bake for 10 minutes, turning over halfway through. Let cool.

2. In a large bowl, combine mayonnaise, scallions, gherkins, capers, tomato paste, lemon juice, paprika, cayenne and shrimp; stir well. Mound mixture onto baguette slices; sprinkle with chives.
