On the plus side, the egg and honey made a good base that coated the nuts well, and the use of peanuts with pecans and pine nuts was a great combination. I was not crazy about the flavors in this - the cinnamon and cayenne didn't work for me. Coriander and cumin together with the sage and sesame seeds might be interesting.

Time: 35 minutes. A great any-occasion hors d'oeuvre, but especially good in cold weather.

Ingredients
- 1 large egg white
- 2 tablespoons honey
- 1 tablespoon sesame seeds
- 4 teaspoons dried rubbed sage
- 3/4 teaspoon cinnamon
- 1/4 teaspoon cayenne

- 1 3/4 cups salted peanuts
- 1 3/4 cups pecan halves
- 1 cup pine nuts
Preparation
- 1. Preheat oven to 300°. In a small bowl, whisk egg white until frothy; whisk in honey, sesame seeds, sage, cinnamon, cayenne, and salt. Add nuts and stir. Divide mixture between 2 large nonstick or parchment-lined baking pans and spread into an even layer.
- 2. Bake, stirring often with a wide spatula, until nuts are golden and fragrant, 20 to 25 minutes. To prevent sticking, turn mixture often with spatula as it cools. Serve warm or cool.
