Spicy Pumpkin Seeds
- Seeds from 2 mini pumpkins (about 3/4 cup)
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon ground cumin
- 1/4 teaspoon ground red pepper
- 1/4 teaspoon paprika
- Remove excess fiber and pulp from seeds, and pat dry with paper towels. Stir together seeds and oil. Combine salt and remaining ingredients; sprinkle mixture over seeds, tossing well. Spread seeds in a single layer on an ungreased baking sheet. Bake at 300° for 35 to 40 minutes, stirring often, until roasted and crisp.
