    Great, simple recipe. These taste very fresh and light (in a good way). I served mine with salsa verde and homemade flour tortillas. Wouldn't change a thing!

    I've been making these since June 2001, and they are one of our family favorites. I always add vertically cut onion slices, and offer salsa verde as an optional topping, in addition to the salsa. Sometimes I substitute chicken. This is a very simple, quick weeknight meal, and also delicious. This recipe was featured as part of a Dinner Tonight menu, and the suggested side dish was for Black Bean Salad. Can't find it in My Recipes, so here it is: Combine 1 (15 -ounce) can black beans, drained and rinsed; 2 chopped green onions; 1 chopped plum tomato; and 1 tablespoon each of chopped fresh cilantro, fresh lime juice, and olive oil.

    This was very good. I used creole seasoning instead of crushed red pepper, and sliced up mini red, yellow, and orange bell peppers instead of green peppers. I served it with a side of black beans (recipe from Bush's Beans) and Greek yogurt instead of sour cream. Very tasty!
