Spicy Poblano Burgers with Pickled Red Onions and Chipotle Cream

    This is terrific as written -- recommend you serve it once without tweaking, it really is great. We hollow-out our burger buns & rolls prior to toasting, so used some of those "centers" for the filler instead of sliced bread. Fantastic summer bbq.

    We made this burger without the sauce because we don't like sour cream. It tasted okay, but not worth the effort so we wouldn't make it again. Based on the fantastic reviews this got, I guess this is a burger best made with the sauce. I know we didn't make the recipe exactly as intended since we didn't use the sauce, but I think a burger should be able to stand on it's own.

    Truly outstanding! We used panko breadcrumbs and a bit of water instead of the bread and milk just beause we were out of milk at the moment and it worked great. We served with a salad and black beans cooked with chipotle chili and wilted spinach (Rick Bayless recipie). This will be the centerpiece of our next cookout!

    Wow! I almost never eat a burger without cheese, and I didn't miss the cheese at all on this one. Made the recipe as is, and it had wonderful flavor and kick (and I like things on the spicy side). My husband loved it too!

    I made this for a barbeque with 15 people. It was a hit! I made two portobella mushroom caps for vegetarians and topped with peice of poblano, sauce, and onions. Served with sweet potato fries and a salad. Cant wait to eat the leftovers tonight. Easy and tasty!

    Absolutely by FAR the BEST BURGER we've EVER HAD. I cook a LOT - at least 3 new recipes every week. This was the best burger we have ever had - which includes any burger we've had at a restaurant or at home. It was A+ 5 star caliber. Phenomenal. The sauce was amazing and a great compliment to a delicious, juicy, succulent burger. Really 5 star restaurant quality. The prep time is noteworthy, but it is definitely worth the time and effort. We rate our recipes 1-10 (ten being best), and my husband rated this an 11. I completely agree. Definitely a keeper and a rotation in our house.

    Amazingly awesome! Made these last night for fun night with friends-everyone raved about them!! I made them in the morning (added ~3T reduced-fat feta), then let them chill in fridge during the day. The chipotle cream sauce is outstanding-it was delish on the burgers, but I've also been eating the leftover sauce all morning with carrots, pita chips, tortilla chips, potato chips, and bell pepper strips. The pickled red onion recipe is awesome (although I doubled all the ingredients other than onion & jalapeno). We even ate the jalapeno-so good!!! I served the burgers with a traditional coleslaw and the "Roasted Sweet Potato Wedges" from CL on this website. YUM!

    This recipe is a bit of hard work, but it turns out FABULOUS! We have made these burgers twice and I look forward to making them today for lunch. You won't regret taking the time to prepare these. I serve these with baked chopped yukon potatoes drizzled with olive oil.

    This recipe was AMAZING!! I would recommend it to anyone. I also topped the burgers with slices of Avocado which gave a great creamy texture and wonderful added flavor.

    yummmmmm....what a burger! This recipe is a little time consuming, but I broke it up into small chunks through out the day. I prepared the pickled onions and roasted the peppers earlier in the day. It was well worth the effort. We absolutely loved the burgers and they were very moist and spicy. I prepared the recipe as is. My teenage son had a friend over who is a very picky eater and he gobbled 2 of these burgers down..but with cheddar cheese instead of the spicy sour cream topping. I loved the sour cream topping but I can see how it may be a bit spicy for some folks. These burgers are sophisticated enough to serve at any party. I served them with grilled corn on the cob for a wonderful Saturday night casual dinner. I will definately make these again.

    A little time consuming but worth it nonetheless. This was really an excellent burger - it's hard to find any faults in the recipe. I used pre-ground sirloin from Whole Foods because I don't have the interest or the equipment to grind a pound of whole sirloin myself. Unfortunately my coals were a bit weak by the time I threw these on the grill, so there was less browning and slight char than I would have liked on the outside of the burger. Next time I'll try to get them on when the coals are still hovering around "high" (approximately 2-3 seconds hand holding time). The burgers also reheat well and the onions and sauce are just as good for several days afterward. This one is definitely a keeper.

    These burgers were the best we've ever tried. They were restaurant quality. I was amazed at the size of each burger - very filling for 325 calories. The chipotle sauce was amazing. Even my 9-year-old son loved them. They aren't too spicy - they have a nice little kick to them though. Excellent!

    Made these last night as my first BBQ burgers of the year and were amazing! Left nice burn on the lips but easily cooled with some icy watermelon. I made exactly as the recipie said and used onion buns. Definitely will serve them again to guests. Had blue corn chips and salsa on the side with the fruit, superb!

    This is the best burger I have ever had! Absolutely delicious. And that is saying a lot, since I had my doubts about this burger because there is no cheese in the recipe. After eating this burger, I say who needs cheese anyway?? The poblano & chipotle chiles along with the pickled onion give a punch that makes this the best burger ever!!! I would not change a thing in this recipe.

    I ended up making a slightly less light version of this, but mine turned out very, very tasty regardless. I used lean ground beef instead of sirloin and omitted the milk & bread. I also did not have sour cream so I used olive oil mayo, plus part of a small yellow onion instead of a shallot. I personally thought it was still awesome, so much flavor! We added american cheese (though I wish I'd had pepperjack) and used an onion roll. I LOVE the pickled red onions!!! I should have made a bigger batch! I only had pickled jalapenos so I just used those, but it still added a great kick. My only complaint was, like all things that taste great, it took a long time to prepare everything. If you do it in advance of a party, this will be a hit :)

    These were simply amazing! These definitely are restaurant quality burgers. They were so moist and the chipotle cream and pickled onions add such a complex flavor to the burgers. If you are looking for a unique burger, this is it. I made these for company tonight and everyone raved how delicious they were.

    I really liked these burgers! I made a few small changes. The poblanos that I bought were really large so I only used one and used a diced jalepeno as well. Next time I will also use a little worcestershire sauce (in my opinion, worcesterchire sauce makes ALL burgers better - if that's possible with these!). I must say, the best thing about these burgers was the chipotle sauce. It gave just the right amount of creamy "kick" to really compliment all the flavors in the burger. YUM! Thanks for the great recipe!

    I have made these burgers twice now, and I feel that they are better than any other burger I have made before. I think the burgers stand out even without the chipotle cream, but to anyone thinking about making these, do it as written, because they really are fantastic.

    We LOVE these burgers - I make them at least once a month and couldn't be more thrilled with the outcome each time. The more I make them, the easier / quicker it becomes to make so don't be daunted initially by the number of ingredients & steps to make burgers (these are worth it!) Definitely try this recipe the first time when you have extra time for prep. I usually use fat free milk, smoked paprika, more garlic & wheat bread, but otherwise make as instructed with no substitutions. I have tried with pickled red onions recipe and using just plain red onions and we think it is best with plain, so that also cuts down on time. Just don't omit the chipolte cream sauce, it really adds complexity and helps soothe the heat. I usually serve these burgers with sliced carrots & celery if in the summer or garlic fries (also a C.L. recipe) in the winter months. Either way, they are outstanding - Enjoy!

    We made these burgers for the first time last night. They were amazing!!! It was a lot of prep work but we are always trying to find new recipes for burgers so we thought we'd give this a try. We were not disappointed. I followed the recipe exactly and wouldn't change a thing. We will be making these again. Also, don't dismiss these if you don't like things really spicy. I was afraid that these would be too hot to eat (I am not someone who likes a lot of spice) but found that instead they were full of flavor with a little zip.
