Spicy Peanut Sauce

This Spicy Peanut Sauce is salty, tangy, and sweet. It's quick and easy to make and is good as a dipping sauce, on meats, even cold noodles.

2/3 cup chicken broth
1/3 cup chunky peanut butter
3 tablespoons lite soy sauce
3 tablespoons fresh lime juice
1 tablespoon honey
1 tomato, peeled, seeded, and chopped
4 green onions, minced
2 garlic cloves, minced
1 tablespoon minced fresh ginger
1 jalapeño pepper, seeded and minced
1/4 cup chopped fresh cilantro
Garnish: chopped fresh cilantro


Bring first 11 ingredients to a boil in a small saucepan over medium-high heat. Reduce heat, and simmer, whisking constantly, 2 minutes or until thick and creamy. Garnish, if desired.
