Spicy Oatmeal Crisps

    Wonderful tasting cookie -- not your ordinary oatmeal cookie -- these are a thin, crisp cookie with a wonderful spicy flavor. I used 4 TBS butter, increased all the spices and added about 1/4 C minced fresh dates. I baked the cookies on parchment paper, so even though the cookies do spread a lot I had no problem with them sticking to the pan. These are great -- will definitely make again.

    While these cookies taste good they are the ugliest things I've seen! Next to my peanut butter kiss cookies, they look pretty disappointing. (They look like a dog accident to be honest.) Not sure what went wrong.

    These were certainly spicey! I followed what many reviewers suggested and used only 4 tbs of butter. Mine did flatten out, but were still tasty. I let them cool on the cookies sheet for a minute or so before putting them on the cooling rack.

    These cookies are tastey. However, mine were not flat like the picture and when put with 7 other types of cookies on a cookie tray, these looked bland and consequently were passed over. I would make them again only if it were the only cookie I was serving. Next time I might flatten them myself before baking to see if that makes them look more interesting.

    I made these cookies today and used 4 tablespoons of butter as suggested, used light brown sugar because it didnt specify which and baked them on parchment paper for 8 minutes and they turned out perfect. I used all the spices called for and these cookies are great. I will make them again for sure.

    My daughter and I made these cookies together the first time. I thought she had the ingredients ready so I added a full stick of butter - TWICE what the recipe calls for! They turned out really flat - but they were still delicious! This week I've made them twice now with the correct amount of butter (4T, not 5) and they turn out great each time - but still really flat! I bake them for 10 minutes. They are not a pretty cookie or one that kids particularly go for, but they are a great adult cookie. I find that I have a hard time eating just one!

    I made these to give as gifts, and was glad I made too many. My husband and I love them! Yes, they are thin, but that's part of what makes them so nice. I'll make these again, for sure.

    I thought these were great and easy to make. I followed the recipe except I didn't use the black pepper. I would probably use parchment next time as they were hard to remove from the pan. The flavor was excellent. I'll definitely make these again and again.

    Delicious! The cookies do spread out a LOT while baking, so just be careful about the size of the cookie dough lumps on the sheet, as well as the placement - I ended up with two giant cookies! They were still very tasty and I received many compliments on the taste. Crispy goodness! This is definitely being added to my list of Chistmas/wintery cookies!

    Very easy to make and they were still chewy the next day. I only added 3/4c of the brown sugar and decreased the butter to 4T since reviewers suggested that and then just dropped by teaspoonful on a cookie sheet with parchment paper. There is a little kick but not overwhelming. I almost might add a little more pepper next time. They flattened out, but not too much. Will make again.

    These cookies are delicious. I used the 5 minute oats instead of regular but it didn't seem to make any difference. I used butter and next time will try just 4 tablespoons as others have suggested. A definite repeat.

    YUM! A great adult cookie! I took them to a brunch and they were a hit. I like the fact that the recipe makes 2 dozen. This amount fits into my day without taking up too much time. I too, used parchment paper. I recommend cooling the cookies a bit before removing them as when soft, they fall apart but become really crispy when cool. Again, I say "YUM"

    Great cookie I only used 3/4 cup sugar and my cookies were not flat. I did not use the pepper and they were perfectly spicy. However, I will try the pepper next time.

    Excellent oatmeal cookie recipe! Wonderfully spicy and chewy...my VERY picky husband can't keep his hands out of the cookie jar!

    While these cookies were tasty the picture displayed was very misleading. They came out almost flat. I have tried to get an answer from Cooking Light but they will not respond. I followed the recipe to the letter but did not want to give them out as gifts because of how they looked.

    I thought these were fantastic. And my husband who swore he was not an oatmeal cookie eater gobbled them up and requested that I make them again. I have made this recipe a total of three times and each time someone has asked me for the recipe! I disagree with the other reviewers who were concerned about the look of the cookie. They reminded me of the florentine lace cookies we used to have when I was little.

    OMG, these really are amazing! Following others' advice, I only used 4 T butter, and didn't have allspice, so I used ginger and a bit more of every other spice to round it out. Fantastic! We can hardly keep our hands off of them. I'm relieved they only make 2 dozen, but definitely will be making more for the holidays!

    This cookie was great! I added 1/8 tsp of pepper instead of 1/4 and it worked perfect. I would make it again

    At 12 minutes these were not crispy but pillow like, so I baked an additional 2 minutes. What a huge mistake I have a nice pile of crumbs and 2 baking sheets that are a mess. The crumbs taste great, kind of like a spiced wafer with oats.

    The taste of the cookies was very good. However, the appearance of the cookies was unappetizing. The first batch spread and filled the cookie sheet, needing to be cut apart. Using less dough, the cookies still spread and just were extremely thin. Baking time was adjusted to 8 or 9 minutes. Would not use recipe again.

    So unlike what others are saying, my cookies did turn out like the picture. But I must say, the pepper was too much for us. I wouldn't use it in this recipe again. We ate them all, but not on my top list as a Christmas giveaway.

    If you're worried about appearance try drizzling some dark chocolate on top. Great recipe.
