Combine yogurt and mustard in a shallow dish. Combine wheat germ and pepper in a shallow dish. Sprinkle salt over both sides of chicken. Dip chicken in yogurt mixture; dredge in wheat germ mixture. Place chicken on a baking sheet coated with cooking spray. Bake at 400° for 20 minutes or until chicken is done.
I've never used or had wheat germ. So, for a quick weeknight dinner, I used store-bought bread crumbs instead. I sliced the chicken breasts in half to effectively "double" the number of servings. (Once cooked, each piece looked like a small, but whole, breast.) Baked at 400 degrees for 20 minutes and could have left in for another 3-5 minutes. Will probably keep this one!
