Ingredients
- 4 (4-ounce) red snapper fillets
- 1/4 cup fresh lemon juice
- 1 teaspoon black and red pepper blend (such as McCormick's)
- 1 teaspoon dry mustard
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- Cooking spray
- Lemon wedges (optional)
Preparation
- 1. Preheat grill.
- 2. Place fish in a large shallow dish; pour lemon juice over fish. Let stand 5 minutes.
- 3. While fish marinates, combine pepper blend and next 3 ingredients. Remove fish from lemon juice, discarding juice. Rub pepper mixture over both sides of fillets.
- 4. Coat grill rack with cooking spray; place on grill over medium-hot coals (350° to 400°). Place fish on rack or in a grill basket coated with cooking spray; grill, covered, 3 minutes on each side or until fish flakes easily when tested with a fork. Serve with lemon wedges, if desired.
