Combine first 6 ingredients in a large bowl; stir well. Add potatoes; stir well to coat. Place potatoes in a single layer on a cookie sheet coated with cooking spray. Bake at 400° for 30 minutes or until browned.
This was a hit at a brunch for my in-laws on Mother's day. Very easy to make. The potatoes were nice and crispy, not mushy and greasy like at some restaurants. They also had a very subtle kick to them. Will be making this again, for sure!
