Based on the Italian pickled vegetable mix, speedy Spicy Giardiniera Relish takes only 10 minutes to make and zests up a cookout.
1 16-oz. jar giardiniera mix, drained
1/2 cup pimento-stuffed olives
2 mild green pepperoncini, stems and ribs removed
2 tablespoons roughly chopped fresh parsley
1/4 cup extra-virgin olive oil
How to Make It
Pulse giardiniera, olives, pepperoncini and parsley in a food processor until finely chopped, scraping down sides as necessary. Transfer to a bowl and stir in oil. Cover and let stand at room temperature for 45 minutes to allow flavors to develop. Stir again just before serving. Cover and refrigerate if not serving immediately; bring to room temperature before serving.
