I made this tonight for dinner and it was insanely good. Both of my kids really liked it and it made enough for 2 nights so leftovers are coming tomorrow. I served it over jasmine rice, with fresh, sliced mangoes for dessert. Next time I'll try a spicier curry to give it a bit more kick.

This was very good, however I made a few changes to make it like Thai dishes I get at the restaurant. I didn't have pre-cooked chicken so I sauteed cut up chicken breast. I used fish sauce instead of salt, basil instead of cilantro and added some brown sugar. I also used more green beans than called for. The result was excellent and I will definitely make this again.

We LOVE this dish.. I make it when rotisserie chickens are on sale (instead of baking a chicken) and use basil instead of cilantro (I love cilantro) - I think this makes it more of a Thai dish. This is a go to dish for us.

This was insanely spicy and we like spicy! Was it my curry paste? (Thai Kitchen? We all pushed our plates away and grabbed a box of Cheerios. Where did I go wrong?

This was great. This was the first dish of this type I have tried that tasted anything like what you get at a Thai place. We did the 3 T of curry paste but will add more when not entertaining. We substitued sugar snap peas and regular coconut milk (could not find either when shopping that week).

The over all flavor was great, but it was too spicy (and I like spicy food). We had green beans the night before so I substituted steamed broccoli and snow peas. They were a great addition! I think next time I will half the amount of red curry paste and it will be amazing!

Meh. I didn't really like this recipe too much. I added onions but I'd recommend adding other stuff like snow peas or zucchini or something. It just didn't do it for me.

I was quite disappointed in this recipe considering the good reviews it got. It was not "Spicy" at all. The flavor was just okay and I made it as written.
