This was a good cabbage salad, but not the greatest. I must say that I don't like uncooked ginger so I omited that, and I also put cayenne pepper instead of red crushed. I would make again. It's very refreshing.

Ingredients
- 3 tablespoons cider vinegar
- 1/4 cup vegetable oil
- 1 teaspoon sugar
- 2 cloves garlic, chopped
- 1 2-inch piece fresh ginger, peeled and grated
- 1 teaspoon crushed red pepper
- 1 large head green cabbage (about 3 lb.), cored and finely shredded
- 2 carrots, grated
- Salt and pepper
Preparation
- Combine cider vinegar, vegetable oil, sugar, chopped garlic, grated ginger and crushed red pepper in a large bowl. Stir well until sugar has dissolved.
- Pile shredded cabbage and grated carrots on top of dressing and toss until blended. Season with salt and pepper. Refrigerate, covered, until ready to serve.
