I really like this as a different sort of side dish...I made it exactly as written and served it with the enchilada casserole from the same issue this is a keeper
Spicy Black Beans

I made this with the Enchilada Casserole featured in the same issue of Cooking Light. I made some changes to the casserole and to this as well, though I rarely deviate from a recipe when I make it for the first time. Instead of using a full cup of red bell pepper, I used 1/2 cup of chopped onion and 1/2 cup of chopped green bell pepper. I also added 1/2 cup of diced tomatoes with green chiles from the can I added to the Enchilada Casserole INSTEAD of the jalapeno (my husband can't eat food that's too spicy). I'm not a huge fan of black beans (they're ok and I will eat them, but they're not something I choose often), but these were seriously good. I usually find black beans bland, no matter what's done to them, but these were most definitely NOT bland. The peppers and onions and tomatoes were the perfect balance with the lime juice and beans to make them just a little bit spicy and very, very flavorful. I will definitely make these again, and not just when I make the casserole.

I made these to go with the enchilada casserole. I also added in diced onion and some diced garlic to the other ingredients. Topped with fresh chopped cilantro and diced avocado it was quite delicious. Fresh tomato would have been nice if I had any on hand.

Pretty good as written and very quick. The lime juice and cilantro make a tasty dressing, but I did find that a sprinkle of ground cumin helped to balance out the lime juice and add another layer of flavor. This would be a good base for variations (e.g., add corn, avocado, tomatoes, green chilis, cheese...). Next time I will try adding some garlic and/or onions.

Easy and quick side dish. Served with homemade tamales. The flavor was fine -- nothing special. Probably won't bother with this recipe again.
