This recipe was AWESOME! I made it exactly as written (using 2 cans of regular Rotel). It was plenty spicy - we love heat and it had a zip! The prosciutto and olives were awesome in it. Will make this again for sure!

I tried this with the other suggestions-added garlic and used diced tomatoes with jalapenos and still thought it was bland. Next time, I'll try adding in chili powder and add in a fresh serrano or jalapeno pepper. I served this with a spanish rice side dish.

Delicious! Adults and children loved it. Definitely serve over saffron rice like suggested.. lots of juice. Perfect amount for 2 adults and 2 teenagers.

This is now a favorite of mine and my husband. Easy and fast! Great blend of tastes! The second time I used cilantro instead of parsley and it was awesome. I love to cook and try new recipes and this is one that will keep my going back to my Cooking Light for more!

I make this fairly often and it's a huge favorite! Easy & fast, but I would love to see a recipe that uses fresh ingredients.
