- 2/3 cup Alpen Original All Natural Muesli
- 1/2 cup 1% low-fat milk
- 1/2 cup part-skim ricotta
- 1 1/2 teaspoons honey
- 1/2 teaspoon grated lemon rind
- Fresh mint
- Combine muesli with milk; microwave at HIGH 1 minute. Combine ricotta, honey, and lemon rind. Dollop 2 tablespoons over each serving of warm muesli, and top with fresh mint. Save remaining ricotta mixture for the rest of the week's breakfast grains.
